Sticky Asian Chicken Tenders

If you're cool like me a.k.a. a 90's baby, there's no doubt in my mind that chicken tenders were in your top 5 favorite foods growing up.  Probably alongside pizza, hamburgers, french fries and mac & cheese, am I right??  Okay Howie, I believe chicken fingers is the correct terminology in Buffalo.  I just got major girlfriend points for that.


Anyway, sometimes I still want my childhood classics, except with the flavor turned up.  And not out of a frozen bag.  And minus the whole deep frying part that adds loads of fat and calories.  That's where Sticky Asian Chicken Tenders come in.  I bread chicken tenderloins in panko bread crumbs, bake them with a drizzle of olive oil to add that unmistakable crunch, and then toss them in Ree Drummond's Orange Chicken Sauce and top them with chopped green onions and peanuts.  A little sweet, a little tangy, a little crunchy...a little perfect!

Asian Potsticker Stir-Fry


Whenever I'm looking for a quick dinner to make for myself after a long day at work, I almost always turn to an Asian stir fry!  They're one of my favorite things to cook because they're a) super fast - less than 20 minutes, b) super healthy - high protein and lots of nutrients from the veggies, and c) versatile!!! - I can mix-and-match anything I might have in my fridge at the time.  Not matter what I add, it's always yummy!  Last night, I had to stop at the grocery store after work for some ingredients, so I decided to put a spin on my usual chicken or beef stir fry with pork potstickers.  Keep reading!  I promise this recipe does not involve 3 hours of making homemade potstickers - or anytime time, actually.  I totally cheated and bought Annie Chung's Organic Pork & Vegetable Potstickers, which are fairly low-cal and high-protein for a frozen food, and take less than 10 minutes to sauté to a golden crisp on your cooktop.  Add some fresh sautéed veggies in a Korean Teriyaki sauce and serve everything over rice, and you have yourself an awesome and healthy Asian dinner for 2.  I know all you health food fanatics...brown rice is better for you.  I just like the softer texture of white rice better!  You gotta try this!

Chinese Chicken Lettuce Wraps


Though my checkbook has apparently thought it's been spring since sundresses started coming out in February, it seems like the weather is finally catching up!  But sadly, warm weather means it's also that time to say goodbye to the hearty winter recipes that can be camouflaged by a sweater, and hellooooo to delicious yet satisfying lighter recipes.  Tonight for dinner I tested out Chinese Chicken Lettuce Wraps, a new recipe I've been thinking about for the last few weeks.  I blended a ton of bold flavors to create a healthy meal with an Asian twist that won't let you feel like you're missing out on anything!
