Magic Peanut Butter Cake


You will never believe what I'm about to tell you.  This lovely little cake I have pictured is made of 3 ingredients.  3 super healthy ingredients.  Did I mention it only takes 1 minute to "bake" in the microwave?  I'm naming this my Magic Peanut Butter Cake because, with 9 grams of protein and less than 130 calories, it really is magical.  Finally a healthy dessert that can actually satisfy my sweet tooth!  And it legitimately tastes good.  Trust me: when it comes to sweets, I'm a very judgmental critic!


I combined 1 tbsp. vanilla whey protein powder, 1 tbsp. creamy peanut butter and 1 tbsp. unsweetened almond milk in a little bowl using a fork so I could cut through the peanut butter texture a little easier.  At this point I was thinking in my head..."hopefully this tastes good. hopefully it's better than the recipe I just tried using only water and whey powder *ew*.  actually I put peanut butter in it so there is almost a 100% chance it will be awesome no matter what."  Basically I had no idea what the outcome would be, which is just how I like it in my kitchen!

I transferred my "cake batter" to a different microwave-safe small bowl to make sure that I could layer it evenly at the base without getting any batter on the sides.  I'm talking really small; use a coffee cup if you don't have mini-dishes because it will burn in a cereal bowl with that large of a diameter.  My next step was to use my amazing cooking skills to place the bowl in the microwave for exactly 1 minute.




...and it comes out looking like this, except bubbling when it's fresh from the microwave.  Not so pretty right?  I promise it tastes good, but this presentation SUCKS.  Even my rustic wood and carefully angled fork couldn't help this poor-looking dish of brown spongy stuff.



Well, I guess I could've eaten the cake as is.  But I love to "beautify" everything because it's fun applying my architecture and design skills to all aspects of my life, including baking!  My design solution?  Use a butter knife to loosen the edges a little and invert the cake onto a dessert plate!  I garnished the cake with a few raspberries to bring in some fresh flavor and make it look extra pretty.  In 3 minutes you have a healthy dessert that won't ruin your workout progress!  You can even go a little crazy with chocolate whey protein powder for a peanut butter brownie??

On a side note: expect more health-conscious recipes coming up on the blog because I'm LOVING all the lean muscle I'm building at Title Boxing Club!  Seriously, this place has gotten me into the best shape I've ever been in during my whole life, and that's coming from a girl who has worked out anywhere from 4-6 days a week for the last 8 years!  Recipes like Magic Peanut Butter Cake will keep us all on track to reaching our fitness goals!
