Hump Day Mojitos!


The weather was rainy, the work week seemed to be taking forever, and my mom had an abundance of fresh mint in her garden. We decided to make the best of a Wednesday night by concocting delicious mojitos using the sweet mint, sour limes, fizzy club soda, and of course, good old Barcardi.  Pairing our drinks with steak fajitas and homemade guacamole?? Our girls night in couldn't be better!


I don't know about you...but this plant just screams mojitos to me!  It would be silly not to put it to good use!


The recipe is comprised of mint, lime, club soda, Barcardi rum, sugar and ice.  I started by putting the mint in a cocktail shaker, along with a splash of club soda, and muddling the mixture with a wood pestle to release all of the tasty mint flavors and juices.  Once the mint leaves were crushed, I squeezed a lime into the mixture, and added 3 shots of Barcardi, 2 Tbsp. of sugar and 1 cup of club soda.  I shook the mixture until it was well mixed, and poured it over ice in 2 stemless wine glasses.





I topped each with another splash of club soda, and extra squeeze of lime juice, and a fresh lime wedge.  Told you Wednesday didn't have to be the worst day of the week!
